Rachel:
In addition to the good information you already have, I have been told that Judith R. Frazin's "A Translation Guide to 19th Century Polish-Language Civil - Registration Documents (Birth, Marriage and Death Records)", is one of the best translation aids available. ISBN 0-9613512-0-9

  Rachel,

Good advice from Rose. I also found the word list very helpful. You can
see some sample Polish records with translation on the SGGEE website,
  Translation Aids.
