[Ger-Poland-Volhynia] German emigration records

     As I'm sure you know, there wasn't a single Germany at the time 
 you're asking about, there were still many different countries, each with
 its own laws, and systems of record keeping. Some of them did try to
 keep track of emigration, with varying degrees of success. 

     Is your Kallstadt the one in the Pfalz? If it is, a good place to 
 start would be a catalogue put together by the archives in Rheinland-Pfalz,
 the title is 

   "Inventar der Quellen zur Geschichte der Auswanderung, 1500-1914:
 in den staatliche Archiven von Rheinland-Pfalz und dem Saarland"
 authors  Peter Brommer, Karl Heinz Debus und Hans-Walter Herrmann. 
 published 1976, Koblenz.

 in the state archives of Rheinland-Pfalz and Saarland]

    This is a 500 page catalogue of material in the archives about
 emigration from the Pfalz area. If there are any relevant records
 from Kallstadt, they will probably be mentioned in there. 

     You might find a copy in a really large library (the British 
 Library in London has a copy, but that might not be so convenient
 for you).
