Natural Resources Canada has maps on line.

Specifically, one of interest is a map dated 1901 showing the ethnic
origins of the Western Provinces
http://ftp2.cits.rncan.gc.ca/pub/geott/atlas/archives/english/1stedition/peopleandsociety/population/page29c_d.jpg

The Germans are shown in yellow, Russians in grey and Austrians in orange.

This map published in the 1906 Atlas of Canada is copyright expired so can
be downloaded and used freely. scroll down to see details

For 1911 - there is another map of the Western Provinces from the 2nd
edition of the National Atlas published in 1915 showing the ethnic origins
( colour code is different)

More Canadian maps on different subjects can be found on this site as well:

I have no Mennonite ancestry but for those who do - a partially
digitized book called Mennonite Historical Atless by William Schroeder -
giving histories of where Mennonites came from and immigrated to -
including many maps

The same authoar has maps showing Mennonite origins and locations on the
Mennonite Heritage Centre's site -
