[Ger-Poland-Volhynia] Possible twins, wrong dates, or something else?

Sarah,First off the year is 1881.
Second you are right in uncovering a mystery. It seems this will remain a mystery. The records all state the information you mention but there is no record of a Ferdinand born before 1882. If you use the Lublin database search engine you can see all the children this couple had. Ludwig was the first listed. This couple got married in 1879 in Lublin so we do not expect children while they went to another church. 

I guess all we can say is we don't know what the deal is with this first Ferdinand.
