[Ger-Poland-Volhynia] English translation of Joachim

Gail, I don't think there is an English translation.  Joachim is my maiden
surname and understanding the difficulties many English speaking have with
pronouncing the name, it makes sense that your gg grandfather Americanized
this name to Joseph and then John.
