Hi Marlo,
  Bronwyn beat me to the punch. That table is one of the best examples comparing them all relating them back to our language. I should add that the German z is pronounced like we pronounce "ts".  
   
  I feel these sounds, particularly for Polish and Russian, represent close approximations in most cases. When you hear a native Pole/Russian pronounce these sounds there is often a slight subtle difference that would be difficult to put into "English" equivalents. 
   
  You can find more of these types of tables and they all help. If you go to some genealogical convention where a workshop deals with phonetics, that should be a big help too.
